NO CARB breakfast sandwich!

Yep, you read that right. I have been playing around with making cheese crisps, and I decided to try to create a breakfast sandwich using the crisps as my “bread”. It was so crispy and lovely.

I used my son’s breakfast sandwich maker (which is such a great buy because it is surprisingly versatile and low cost), and it made this a very speedy concoction. You could also just use a skillet or molds to create the bread rounds as well as the egg.

  • 4 Tbsp shredded cheddar (or other cheese of choice) divided into 2 Tbsp portions
  • 1 egg
  • 1 slice bacon (or other breakfast meat of choice)
  • salt and pepper to taste

Heat a large skillet over medium-high heat. Spread out the two portions of shredded cheese so that they are in a relatively round shape. Once they develop small bubbles and maintain shape, remove to a paper towel. Cook the egg using desired method (scrambled, sunny side up, over easy…). Place the egg over one of the rounds, season, and top with desired sandwich toppings. Place the remaining cheese crisp over the top. Enjoy!


    1. You are absolutely right. Yummly calculates the nutritional information, and there is definitely a glitch in their system. I will fix this ASAP. Thanks for bringing it to my attention!
