Caprese with Avocado

This was a great, light lunch today. It definitely hit the spot and was easy.

  • 8 slices fresh mozzarella
  • 1 medium tomato, sliced
  • 1/2 avocado, sliced
  • 1 Tbsp olive oil (I used an herb-infused olive oil)
  • 1 tsp balsamic vinegar
  • sea salt

Method:

Layer the cheese, tomato, and avocado. Drizzle olive oil and vinegar over each one, and sprinkle with salt to taste. Enjoy!
